WHOLE FOODS PROMOTES MILITANT VEGETARIAN AGENDA
Has the Upscale Market Outlived Its Usefulness?

WASHINGTON, DC. February 3, 2010: Whole Foods Markets has launched a nationwide “Health Starts Here” marketing scheme that endorses a low-fat, vegetarian diet, with promises that the diet will “improve health easily and naturally.” The plan promotes the books and private business ventures of Joel Fuhrman, MD, and Rip Esselstyn, both of whom worked with Whole Foods to formulate the new guidelines. Customers now receive a pamphlet urging them to adopt a low-fat, plant-based diet and to cut back or completely eliminate animal foods. Many Whole Foods stores no longer sell books advocating consumption of meat, eggs and dairy products.

The plan will feature new Aggregate Nutrient Density Index (ANDI) labels for foods in the store; the index is designed to make plant foods to appear “nutrient dense” by favoring various phytonutrients in plants and ignoring many vitamins and minerals essential to health. “Whole Foods has stacked the deck against animal foods by choosing ANDI parameters that do not include a host of key nutrients, such as vitamins A, D and K, DHA, EPA arachidonic acid, taurine, iodine, biotin, pantothenic acid, and vital minerals like sodium, chloride, potassium, sulfur, phosphorus, copper, manganese, boron, molybdenum and chromium,” says Sally Fallon Morell, president of the Weston A. Price Foundation. “Many of the phytochemicals that Fuhrman includes in the index he developed for Whole Foods play no essential role in the body and may even be harmful.”

“Animal foods like meat, liver, butter, whole milk and eggs contain ten to one hundred times more vitamins and minerals than plant foods,” says Fallon Morell. “Plant foods add variety and interest to the human diet but in most circumstances do not qualify as ‘nutrient-dense’ foods.”

“For years before becoming deathly ill, I followed the dietary suggestions in the Whole Foods plan,” said Kathryne Pirtle, author of Performance without Pain. “I ate large amounts of organic salads, vegetables and fruits, lots of whole grains, only a little meat and no animal fat. I had chronic pain for twenty-five years on this diet, then acid reflux, then a serious inflammation in my spine followed by chronic diarrhea. Without switching to nutrient-dense animal foods, including eggs, butter and whole dairy products, not only would I have lost my national career as a performing artist, I would have died at forty-five years old! I am not alone in this story of ill health from a low-fat, plant-based diet, which does not supply a person with enough nutrients to be healthy and can be very damaging to the intestinal tract.”

“Consumers can send a message about Whole Foods’ misinformed scheme by voting with their feet,” says Fallon Morell. ”Most major grocery store chains now carry basic organic staples and a larger array of organic fruits and vegetables than Whole Foods markets. And citizens should purchase seasonal produce and their meat, eggs and dairy products directly from farmers engaged in non-toxic and grass-based farming. It’s not appropriate for Whole Foods to promote a scheme that has no scientific basis and that bulldozes their customers towards the higher profit items in their stores.” The local chapters of the Weston A. Price Foundation help consumers connect with farmers raising animal foods in humane, healthy and ecologically friendly fashion.

“The growing emphasis on plant-based diets deficient in animal protein also serves to promote soy foods as both meat and dairy substitutes,” says Kaayla T. Daniel, PhD, CCN, author of The Whole Soy Story: The Dark Side of America’s Favorite Health Food. “Soy is not only one of the top eight allergens but has been linked in more than sixty years of studies to malnutrition, digestive distress, thyroid dysfunction, reproductive disorders including infertility, and even cancer, especially breast cancer.”

“Low-fat patients are my most unhealthy patients,” says John P. Salerno, MD, a board certified family physician from New York City. “The reason we are spiraling into diabetes and obesity is because of the low-fat concept developed by the U.S government decades ago. Low-fat diets have a low nutrient base, and phytonutrients in vegetables cannot be properly absorbed without fat.”

Fallon Morell cites recent studies from Europe showing that low-fat diets promote weight gain in both children and adults, and also contribute to infertility. A meta-analysis published January, 2010 in the American Journal of Clinical Nutrition found no significant evidence that saturated fat consumption is associated with an increased risk of cardiovascular disease.

“Whole Foods CEO John Mackay has stated that eating animal fats amounts to an addiction. But in fact, animal fats are essential for good health,” says Fallon Morell. “The nutrients in animal fats, such as vitamins A, D and K, arachidonic acid, DHA, choline, cholesterol and saturated fat, are critical for brain function. In the misguided war against cholesterol and saturated fat, we have created an epidemic of learning disorders in the young and mental decline in the elderly.”

“Perhaps the vegetarian diet has affected the thinking powers of Whole Foods management,” says Fallon Morell. “It’s time for the stockholders to insist on leadership devoted to increasing customer base, not promoting a personal vegetarian agenda.”

HR2749, the “Food Safety Enhancement Act of 2009″ has passed out of committee and is now on the floor of the house. As you can see from the FAQs below, this bill would be an absolute disaster for small farms and artisan food production.

HR 2749 – Food Safety Enhancement Act of 2009

Q1: Does FDA have jurisdiction over INTRAstate commerce?

A1: As a federal agency, the FDA has jurisdiction over INTERstate commerce. For example, the prohibited acts regarding adulteration and misbranding in the current Federal Food, Drug and Cosmetic Act (FFDCA) all refer to INTERstate commerce. However, the existing law states that “in any action to enforce the requirements of [FFDCA] . . . the connection with INTERstate commerce required for jurisdiction in such action shall be presumed to exist.” [1a] Combined with court decisions addressing the connection between INTRAstate and INTERstate commerce, it is unclear what kind of showing defendants would have to make to rebut the presumption and avoid federal regulation. The agency’s regulatory power is limited to commerce, however, so non-commercial activities (such as growing your own vegetables for personal consumption) are not regulated.

Under current law, a business qualifying as a “food facility” must register with FDA, even if that business only engages in INTRAstate commerce. [1b] In addition, the agency can inspect the records of a business that engages solely in INTRAstate commerce if there is a “reasonable belief that an article of food is adulterated and presents a threat of serious adverse health consequences or death to humans or animals.” [1c]

Q2: Would HR 2749 expand the FDA’s regulation of INTRAstate commerce?

A2: Yes. Under HR 2749, FDA’s regulatory control over INTRAstate commerce would grow considerably. The bill would allow for inspections of firms whose business is strictly within a State. [2a] It would impose, among other requirements, a mandate for all firms in the food business to comply with national performance standards for various foods set by the Department of Health and Human Services (HHS). [2b] It would also require most firms in the food business to establish a traceback system for their products, even if those products never cross State lines. [2c]

Q3: I have a garden and sell produce at a road-side stand on my property. Would HR 2749 apply to me?

A3: Yes, you would now have to follow federally-established standards for growing produce. [3a] Produce not grown as required by these standards would be considered as adulterated under the Federal Food, Drug and Cosmetic Act (FFDCA). [3b] Further, you would be required to make your business records available to FDA inspectors. [3c] The inspectors would have the power to show up unannounced without a warrant to search your records without any evidence whatsoever that you have committed a violation of the law. If you refuse to let the inspector see your records, you would be guilty of adulteration under FFDCA. [3d]

Q4: I sell produce from my garden at a local farmers market, under HR 2749 would I have to register as a “food facility” with FDA?

A4: Farms are exempt from the registration requirement under current law. [4a] HR 2749 would not eliminate this exemption. ”Farm” is narrowly defined under current regulations [4b]; so, it is possible that many farms that have not registered in the past, could be required to do so if FDA has more resources at its disposal to enforce registration.

For example, a farm that sells vegetables straight from the garden (i.e., no processing) would not be a “food facility”. If FDA strictly interprets the definition of “farm”, a farm that sells canned vegetables at the market would be a “food facility” because canning is considered “processing” under the law. [4c] Under federal regulation, a farm that processes food would not be considered a “farm” for purposes of the registration requirement unless ALL of the processed food is consumed ON the farm. [4d]

Under HR 2749, those who sell vegetables from the garden at farmers markets would be required to follow federal standards for growing produce [4e]; and their business records would be subject to random warrantless searches by FDA inspectors even if the agency has no evidence of any violation of the law. Q5: I own a bakery and sell my goods at a local farmers market, how would HR 2749 apply to me?

A5: HR 2749 would apply to you in the following ways:

1 – Your bakery would qualify as a “food facility” and you would need to register with FDA each year [5a] and pay an annual fee ($500 in 2010 [5b], and increasing in future years as indexed for inflation [5c]).
2 – You would have to register in electronic format. [5d]
3 – You would be required to have a unique facility identifier number. [5e]
4 – You would be required to conduct an analysis identifying potential hazards at your food facility; and you must implement controls to prevent those hazards from occurring as well as a plan for what to do in the event that any do occur. [5f]
5 – If your products cross state lines, you must develop a FOOD SAFETY PLAN. [5g-also see Q6/A6 below]
6 – You would also be required to establish and maintain a system for tracing the food you produce. It is uncertain at this point what this traceability system will require, but the requirements are likely to be extensive.

Q6: What will a FOOD SAFETY PLAN involve?

A6: Your FOOD SAFETY PLAN would have to include a hazard analysis that identifies potential hazards in your operation. The plan must also include descriptions of a variety of procedures you follow to prevent hazards from occurring and corrective actions to take if any does occur. In addition, you would need to describe your procedures for recordkeeping, conducting recalls, and traceback. Further, the plan must include how you ensure a “safe and secure food supply chain” for the items and ingredients you use as well as how you implement any science-based performance standards required by FDA. Q7: I have read a summary of HR 2749 and am alarmed by the provision giving the Department of Health and Human Services (HHS) the power to quarantine any geographic area within the country. How broad is this power?

A7: Under HR 2749, the HHS Secretary would have the power to prohibit ALL MOVEMENT of ALL FOOD within a geographic area. No court order is needed to exercise this power. The Secretary only has to notify the appropriate official of the State(s) affected and issue a public announcement. [7a]

Q8: I am a raw milk consumer. Is it true that under HR 2749 would give FDA the power to institute a complete ban on the sale of raw milk?

A8: Yes, HR 2749 requires the HHS Secretary to issue “science-based performance standards . . . applicable to foods or food classes.” The Secretary is to “identify the most significant foodborne contaminants and the most significant resulting hazards . . . and to minimize to an acceptable level, prevent or eliminate the occurrence of such hazards.” [8a] FDA would have the power to make pasteurization of all raw milk a performance standard. Based on both its public statements and its record of taking enforcement actions against farmers, FDA is vehemently opposed to the consumption of raw milk and would like to ban its distribution.

Even if FDA does not issue a performance standard requiring pasteurization, the likelihood is that if HR 2749 passes into law, the agency will be increasing its enforcement actions against raw milk producers whose products cross state lines. FDA has indicated that raw milk is a priority item with the agency; with the passage of HR 2749, it would have much greater resources to go after raw milk than it did before. FDA could take enforcement action directly or through state agencies funded by FDA.

The way to stop this threat is to support HR 778, a bill that would, in effect, end the ban on raw milk for human consumption in interstate commerce. Q9: I purchase products from an Amish producer who has said he would not register his facility because the electronic filing requirement violates his religious beliefs. What are the criminal and civil penalties he could be facing if he is charged with violating the law?

A9: Under HR 2749, failing to register a food facility would constitute “misbranding.” [9a] If any of the “misbranded” products are introduced or “delivered for introduction into interstate commerce”, the producer could be sentenced to up to ten years and be assessed criminal fines. [9b] Under HR 2749, anyone knowingly violating certain prohibitions contained in the FFDCA such as the prohibition against introducing adulterated or misbranded food in interstate commerce, could face these penalties.

In addition, the Amish producer could be facing substantial civil penalties. Under HR 2749, any individual who knowingly violates a provision of section 331 of FFDCA (prohibited acts) relating to food, can be fined up to $100,000; a corporation can be fined up to $7.5 million. [9c]

Q10: I’m a farmer who sells products direct to consumers. I want to protect the privacy of those who purchase from me and do not want to turn over to FDA any customer information I have in my records. What are the potential penalties if I refuse?

A10: Under HR 2749, FDA would have access to all records relating to the food producer’s distribution of products. Failing to provide records to FDA would constitute adulteration. [10a] The criminal penalty for refusing access to records would be up to ten years imprisonment. [10b] The civil fines could be up to $100,000 for an individual and $7.5 million for a corporation. Overhaul of Management and Culture Needed

Please urge President Obama and new USDA Secretary Tom Vilsack to take immediate action to repair the USDA’s increasingly dysfunctional National Organic Program (NOP). Suspect imports of grains, nuts, and vegetables from China and other countries, questionable organic milk, beef, and eggs from giant factory farms, and the erosion of opportunity for family farmers are plaguing the organic sector.

The letter specifically asks that they take “a very strong and proactive posture in turning around management at the National Organic Program,” which they described as being “Katrina-ed” by the Bush administration.

“The stewardship of the organic program at the USDA has been an absolute abomination,” said Mark A. Kastel, Cornucopia’s senior farm policy analyst. ”It was not just management by neglect-it was an intentional monkeywrenching of the Department’s oversight of the industry.”

In the last several years, audits prepared by the American National Standards Institute and the Inspector General’s office have blasted the NOP for failing to ensure that independent certification agencies, which verify organic farming and production practices, are competent and properly performing their jobs.

During the Bush administration, USDA political appointees significantly softened penalties for organic lawbreakers, overruling stiff enforcement actions recommended by career civil servants, for factory farms that were found willfully violating federal organic standards. Other complaints detailing abuses on factory farms were quashed or went uninvestigated.

The Bush administration also stacked the National Organic Standards Board (NOSB) with representatives from corporate agribusiness instead of, as Congress intended, a broad spectrum of the organic community. The President and Secretary need to hear that the organic community wants the very best new, independent nominees on the 15-member NOSB. Our new governmental leaders need to hear from you, now!

Cornucopia’s “Change@USDA” campaign is helping stakeholders in the organic community unite for rehabilitation of the NOP. We need a sweeping management shakeup at the National Organic Program. We need your help to build momentum for change.

FLAWED FOOD SAFETY BILLS IN CONGRESS

Many of you have been hearing about HR 875, a food safety bill that has been introduced in Congress. Although much of what has circulated the internet is not accurate, HR 875 does pose serious problems for sustainable farmers and their consumers. Unfortunately, there are already four other “food safety” bills that also pose serious problems: HR 814, HR 759, S 425, and S 510. HR 814 is essentially a mandatory NAIS bill, while the others focus on produce, processed foods and game under FDA jurisdiction.

Consumers who buy nutrient-dense foods from local, sustainable farmers can feel secure about the safety of their food. The same is not true for the majority who buy their food in grocery stores from mass-production industrialized operations. We understand the pressure that Congress faces to improve the safety of that mainstream system. But it is critical that the laws not interfere with the right to choose local foods or with our farmers’ ability to raise safer, healthier foods!

Small sustainable farms are fundamentally different from factory farms, and should not be regulated the same way! All of the proposed food safety bills suffer from a “one-size-fits-all” approach. And even though the bills’ sponsors might intend for them to apply only to food crossing state lines, the federal agencies regularly take a broader view of their jurisdiction. The FDA’s and USDA’s past actions clearly show that Congress must place strict limitations on these agencies, or they will impose burdensome and unfair regulations and enforcement actions on small farms.

We don’t know which of these bills will move forward to committee hearings — or perhaps another bill, not yet filed, will be the one to move forward. So we encourage everyone to send a clear message: Protect our farms from bad regulation!

TAKE ACTION: Call your U.S. Representative and Senators. If you do not know who represents you, you can find out at www.congress.org or by calling the Capitol Switchboard at 202-224-3121. Ask to speak to the staffer who handles food safety issues.

Talk with the staffer about why you support local foods. Tell them you oppose the five bills listed above. Ask that they support a food safety bill that focuses on the real threats to food safety, such as uninspected imports from China and lax inspections of massive slaughterhouses and other factory processing, and ask that any new laws explicitly exempt small farmers. Explain that this issue cannot be left to the agencies’ discretion, and you want a clear focus on the broken factory farm system and not on small, sustainable farmers.

UPDATE: Congressional Hearing on NAIS

Last Wednesday, the U.S. House Subcommittee on Livestock, Dairy and Poultry held a hearing on NAIS. The questions and comments of several of the Subcommittee members revealed that they view NAIS as a food safety program and critical for animal health in case of a “catastrophic outbreak.” One member said, in essence, that the costs to farmers financially and in loss of privacy must be weighed against the “cost in human life” if NAIS isn’t implemented.

Yet USDA continues to provide absolutely no scientific evidence to support the claim that NAIS will do anything at all to improve animal health or food safety! What NAIS will do is impose government surveillance and significant expense on animal owners for no real benefit to the public. The only ones who will benefit from NAIS are the meat packers and exporters, tag manufacturers, database managers and other large corporations.

The issue of the National Animal Identification System (NAIS) is heating up in both Congress and the USDA. Below are two important actions alerts explain how you can help protect your right to farm and our food supply!

SUBMIT COMMENTS TO THE USDA BEFORE MARCH 16

The USDA has proposed a rule to require all farms and ranches where animals are raised to be registered in a federal database under the NAIS for existing disease control programs. The draft rule covers programs for cattle, goats, sheep, and swine. It also sets the stage for mandatory NAIS animal identification in the future.

It is CRITICAL that the USDA and Congress hear from the hundreds of thousands of people who will be adversely affected by the NAIS program. This includes not only animal owners, but also consumers who care about local and sustainable foods, taxpayers who object to wasteful government programs, and advocates for a safer food system.

CONGRESSIONAL HEARING ON NAIS, MARCH 11

The U.S. House Subcommittee on Livestock, Dairy and Poultry will hold a hearing on “animal identification programs” on Wednesday, March 11, 2009. This is the first time in several years that any Congressional Committee will hear testimony about NAIS! It is critical that the thousands of farmers and consumers who oppose NAIS make their voices heard in this process!

STEP 1: Before the Hearing:

At the end of the alert is a list of Subcommittee members. If one of the Subcommittee members is from your state, call that member. If your state does not have any representation on the Subcommittee, contact your own Representative and ask him or her to approach the Subcommittee to urge them to oppose NAIS. If you’re not sure who represents you, go tohttp://www.congress.org

When you call, ask to speak to the staffer who handles agricultural issues, and talk with them about your concerns about NAIS. Use a brief personal story to explain how NAIS would impact you. Emphasize that you want them to ask hard questions of both the industry and USDA representatives, and to make sure that people representing those who oppose NAIS are also heard at the hearing.

NAIS in Appropriations Bill

Action Alert: NAIS in Appropriations Bill

The 2009 omnibus Appropriations bill, HR 1105, passed the House last week. The bill includes $14.5 million of funding for NAIS, which is significantly less than the amount requested by the USDA for FY 2009.

Representative Obey (D-WI) included a statement in the record about the intended uses of the appropriations for the USDA, including timelines and performance goals for NAIS. This statement does not mandate NAIS because it is not part of the bill itself. But it implies approval of USDA’s Business Plan and pushes USDA to move forward with implementing it, including the use of existing disease control programs and other coercive tactics to implement NAIS.

Call your Senators and ask that they support an amendment to strip the NAIS funding out of the bill! You can find your Senators’ contact information at www.congress.org or by calling the Capitol Switchboard at 202-224-3121.

The good news is that it appears that the provision that would have required the School Lunch Program to buy meats only from NAIS-registered farms did NOT make it into the omnibus Appropriations bill. Thank you to everyone who contacted their Congressmen last summer and fall to oppose that provision!

BACKGROUND

The USDA has been working for over five years to force NAIS onto American animal owners. NAIS is designed to identify and track each and every individual livestock and poultry animal owned by family farmers, hobby farmers, homesteaders, and pet owners across the country.
USDA claims that NAIS is a disease tracking program, but has refused to provide any support for its claims. In reality, NAIS will impose high costs and government surveillance on every farmer and animal owner for no significant benefits, and will likely force many small producers out of business.

NAIS does nothing to improve food safety for consumers or prevent animal diseases. This program is a one-size-fits-all program developed by and for big Agribusiness. NAIS will increase consolidation of our food supply in the hands of a few large companies and put the brakes on the growing movement toward local food systems.

Despite promises to the contrary, the USDA’s new proposed rule would make portions of the NAIS mandatory for thousands of people in every state. Anyone who participates in federal disease control program for cattle, sheep, goats or swine will have their premises registered. The NAIS Premises Identification Number (PIN) will become the only form of premises identification acceptable for USDA animal health purposes, with no opt-out provision.

The proposed rule would also limit official Animal Identification Numbers to the NAIS-compliant 840-numbering system, laying the groundwork for future regulations that would limit people’s options on the types of tags they could use.

The proposed rule is not final yet. You can help stop it by visiting the Federal Registry and making a comment. It is imperative that people speak up to protect our right to farm and our food supply!

The proposed rule mandates the NAIS Premises Identification Number (PIN) as the sole means of identifying properties for USDA animal health purposes. The proposed rule also mandates the use of the NAIS numbering system (i.e. the “840 numbering system”) for eartags using official animal identification numbers. Tags using other numbering systems would be required to be linked to a NAIS PIN.

The draft rule is seriously flawed for multiple reasons:

1) Does not substantiate the alleged benefits to animal health. USDA makes general claims about the benefits of identifying locations where animals are kept, but the agency does not address the ability of existing programs to meet this purpose, nor how the proposed rule would improve the capability to identify locations.

2) Ignores the costs and burdens. The proposed rule would substantially increase costs for livestock owners and taxpayers. Costs include the development and maintenance of a massive database; purchase of 840-numbered tags by animal owners; changes by state agencies to make existing programs consistent with the rule; and increased federal government intrusion into the lives and daily activities of farmers and other animal owners.

3) Violates individuals’ religious beliefs. Amish, Mennonite, and some other individuals have religious objections to the universal numbering system under NAIS.

4) Creates disincentives for people to seek veterinary care for their animals and participate in existing disease control programs. The proposed rule lists four animal disease programs-tuberculosis , brucellosis, scrapie, and Johne’s – and will also impact others. These programs include provisions for veterinary care through vaccinations and testing. Animal owners who object to NAIS may avoid participating in these programs, thereby increasing health risks to the public and farm operations.

The proposed rule is a significant step towards implementing the entire NAIS program. Thus, the agency should address the fundamental question of whether it should be implementing NAIS at all. In addition to the problems with the draft rule listed above, there are many additional objections to the entire NAIS program:

1) No significant benefits: USDA’s assertions that NAIS will provide benefits for animal health are not supported, and actually contradict basic scientific principles.

2) High costs for animal owners and taxpayers: These costs include: (1) the development, maintenance, and update of massive databases; (2) the costs of tags, most of which will contain microchips; (3) the labor burdens for tagging every animal; (4) the paperwork burdens of reporting routine movements; and (5) the costs of enforcement on millions of individuals.

3) Impracticality: The databases to register the properties, identify each animal, and record billions of “events” will dwarf any system currently in existence.

4) Waste of money: The USDA has already spent over $130 million on NAIS implementation, but has yet to develop a workable plan for the program.

5) Diverts resources from more critical needs such as disease testing, disease prevention through vaccination and improved animal husbandry practices, and disease detection in currently uninspected livestock imports.

6) Damage to food safety efforts: NAIS will not prevent foodborne illnesses, such as e. coli or salmonella contamination, because the tracking ends at the time of slaughter. Food safety is better served by focusing on programs such as increased testing for bovine spongiform encephalopathy (BSE or Mad Cow), improved oversight of slaughterhouses and food processing facilities, and increased inspections of imported foods. Programs such as NAIS that burden small, sustainable farmers will hurt efforts to develop safer, decentralized local food systems

7) Discourages involvement in farming or animal husbandry: Because of costs and government intrusion, some people will choose not to stay in farming or go into farming. This will result in less competition, greater reliance in foreign imports and poor quality at higher prices.

I urge the USDA to withdraw the proposed rule to implement portions of the National Animal Identification System, Docket No. APHIS-2007-0096.

CHILDREN’S PROGRAM

The three-day children’s program is $100, which includes lunch and evening activities on Friday and Saturday. Space is limited, preregistration a must!!

Friday Activities: Begin conference photo journals, make conference nametags and totebag. Guest speaker topic, “Mental & Physical Relaxation” with a yoga lesson. Afternoon activities include making playdough and clay ornaments, and making bath salts. Children will make an afternoon snack of nut butter on celery stalks with raisins. In the evening, movie night with popcorn snack

We are pleased to announce three fantastic activities for Monday, November 10. SPACE IS LIMITED for all of these activities, so be sure to secure your space as soon as possible.

THREE STONE HEARTH TOUR
Three Stone Hearth is a Community Supported Kitchen in West Berkeley that prepares nutrient dense foods on a weekly basis for Bay Area families. In this tour, you will get to see the facility, learn about the operations of the kitchen, meet the worker-owners, and spend a few hours pitching in and working on a culinary project with kitchen manager Porsche Combash. No need to bring knives or aprons, these are provided. The day will conclude with a communal, nourishing lunch.

The bus leaves the hotel at 8:30 and drives to Three Stone Hearth, 1 Boulevard Dr, Berkeley, California, for a 9:30 am arrival. Pick up at 3:00 pm and and return to the hotel by 4:00 pm. LIMITED TO A MAXIMUM OF 12 PEOPLE. Cost is $90 and includes lunch.

FARM AND WINERY TOUR
Includes Drakes Family Oyster Farm, Stubbs Vineyard and Clark Summit Farm.

DRAKES FAMILY OYSTER FARM: During the course of the approximately hour-long tour of Drakes Bay Oyster Farm, given by oyster farmers Kevin & Nancy Lunny, you will learn about the cultural, historical and ecological importance of this small family farm. You will be shown how we grow both our “cluster” oysters and “single” oysters doing all processing right on the farm in California’s last operating oyster cannery! You will be informed about our struggle to continue to operate in Point Reyes National Seashore beyond 2012. And, naturally, you’ll finish the tour with a tasting of a freshly harvested Drakes Bay Oyster on the half shell!

CLARK SUMMIT FARM
Visitors will see many animals including geese, guineas, milking Jerseys, pastured broilers, laying hens, turkeys, grass-fed beef, dairy and meat goats, and pastured hogs. You will see how we raise our animals in an organic and free range manner. That means letting the cattle take as long as they need to reach slaughter weight, not rushing them with drugs or cheap carbohydrates; helping our sows have their piglets wherever they want, not confined in a tiny cage; giving the laying hens the freedom to run all over the farm, and the broiler chickens plenty of room to stretch their legs on grass while protecting them from predators until they’re bigger

My session will be a demonstration to show how to make 10 litres of fresh unpasteurized milk into Cheddar Cheese, in so doing explaining the principles of making firm pressed cheese which can be stored for months. Quark, which is a soft cheese that needs to be eating fresh and Ricotta which will be made from the whey as a byproduct of the Cheddar. Participants will certainly understand the basic principles of cheese making and have the confidence to go home and have a try at making their own cheese themselves.

1:00 – 4:00 pm Crockpot Cooking with Jessica Prentice
Slow and Low: Nourishing Food from the Slow Cooker. Time to dust off your Crockpot! Slow-cookers are amazing tools for preparing nourishing traditional meals at home. This low-temperature approach is ideal for dissolving gelatin, rendering fats, braising pastured meats, and intensifying flavors. This class will introduce you to making broths, soups, stews, lard, ghee, and even porridges and other dishes using a home slow-cooker. Taught by Jessica Prentice, author of Full Moon Feast and co-owner of Three Stone Hearth Community Supported Kitchen.
